This month, CIS highlights a traditional Mozambican recipe: Mariscada à Moçambicana by Chef Admaia Modondo.
Ingredients
- 6 prawns,
- 1 mackerel fish,
- 1 lobster,
- 2 lemons,
- 2 garlics,
- salt,
- 0,5kg of acacia leaves (moringa),
- 100g arroz,
- 100g butter
Instructions
- Squeeze lemon to marinate and mix with galic and a pinch of salt.
- Wash and cut the fish, leave to marinate for na hour.
- After an hour, put the fish to grill in charcoal (Mozambican way)
- Put the butter to melt and mix it with garlic and lemon, add some herbs to flavour.
- Keep cooking and boiling during 90 minutes.
- Cut the lemons for garnishing and serve.
For the Acacia leaves (Moringa)
- Wash the leaves and put to boil.
- Drain the water.
- Chop the onions and the tomatoes.
- Sweat the onions and the tomatoes, after 4 min. add the acacia leaves and let it cook for 5 min.
- It’s ready to be served
